toro トロ is a term describing the fatty parts of the tuna. Toro comes from the Japanese verb torokeru 蕩ける meaning “to melt” as in “to melt in your mouth.”

ōtoro
The ō in ōtoro 大トロmeans “big” or “a lot,” as in “a lot of fat.” This is the fattiest part of the tuna.

ōtoro comes from the abdomen of the tuna near the head, and accounts for only a fifth of all of the toro in the fish. It has a rich fatty flavor and a melt-in-your-mouth texture, and contains a lot of DHA, which activates the brain, and EPA, which is said to improve circulation. It also contains more than twice as much vitamin A, D and E as akami, the so-called “red flesh” of the fish. It’s also the most expensive tuna you can order.

chūtoro
The next fattiest part of the fish is called chūtoro 中トロ. chūtoro can be obtained not only from the abdomen but also from the back. In terms of taste and texture, it’s somewhere between ōtoro and akami. It’s cheaper than ōtoro.
